Strawberry Ice Cream Mochi

Cooking time: 6 mins
Serves: 12 small mochi
Filling:
- 225g - 250g (1 ½ - 2 cups) vegan ice cream, of choice
- 60g (3 tablespoons) strawberry jam, optional
Mochi Dough:
- 240g strawberries, fresh or frozen
- 150g (1 ¼ cup) sweet glutinous rice flour
- 50g (¼ cup) sugar
- Few spoons of beetroot powder, optional
- 30g (¼ cup) corn flour or potato starch, as needed)
Prepare the Ice Cream:
- Optional: Dollop the jam onto the ice cream.
- Use a small ice cream scoop to scoop the ice cream into balls that are about 2 tablespoons large. Place the ice cream on a freezer-safe tray and freeze for 2 hours or until solid.
Prepare the Mochi Dough:
- Use a blender or food processor to puree the strawberries until smooth
- Add the flour, strawberry puree, sugar and beetroot powder to a medium mixing bowl. Mix until combined and there are no lumps.
- Cover the bowl with microwave-safe wrap and microwave for 2 minutes on high. Stir the mixture with a spatula or the dough hook of a hand mixer.
- Microwave the mochi dough for 1 minute then mix again. Coat your utensils with corn flour or oil to prevent the mocha from sticking. Repeat the process 2-4 more times or until your mochi dough is sticky and glossy, and comes together in a loose ball.
Assemble the Mochi:
- Generously coat your work surface, hands and any utensils with corn flour or oil. Divide the mochi dough into 12 parts.
- Use a rolling pin to flatten each mochi ball into a flat round circle around 6mm thick.
- Place one scoop of ice cream in the middle of the mochi dough and quickly wrap the mochi around the ice cream. Cut off any excess dough. Place the mochi on a freezer-safe tray and freeze. Repeat with the remaining mochi. Make sure you're wrapping only one mochi at a time while leaving the rest of the ice cream in the freezer.
- Enjoy immediately! If you’re eating the mochi later, let them sit at room temperature for 5 minutes then enjoy.
