Sticky Soy Maple Eggplant

Ingredients:
- 750g Eggplant
- 2 tbsp Light Soy Sauce
- 2 ½ tbsp Maple Syrup
- 1 tbsp Toasted Sesame seeds
- Olive oil
- Salt and pepper
Method:

Start by dicing the eggplant into small 3cm pieces and setting them aside.
- Next, heat a large frying pan over high heat, drizzle it with olive oil, and add half of the diced eggplant, ensuring not to overcrowd the pan, so they can sear evenly, and cook for approximately 2 minutes.
- Stir occasionally until the eggplant turns a golden brown color. Remove the cooked eggplant from the pan and repeat the process with the remaining diced eggplant until all pieces are cooked.
- Once all the eggplant has been seared, return it to the pan and add the soy sauce, maple syrup, and season with salt and pepper.
- Stir the mixture while cooking until it thickens and caramelizes, which should take about 3-5 minutes over medium heat.
- Finally, sprinkle with sesame seeds and serve the dish hot.
Tips:
- Toast the sesame seeds on a small pan on medium high heat while stirring until golden.
- Serve as a side dish with grilled beef or chicken with steamed greens.
