Makes 1 tray or 18 bars
Ingredients
- 120g Butter
- 50g Coconut Sugar
- 4 Tbsp Honey
- ½ Cup Pepitas
- ½ Cup Cranberry Fruit and Nut Mix
- 50g Pistachios
- ½ Cup Apricot and Coconut Slice
- ¼ Cup Chia Seeds
- ½ Cup Desiccated Coconut
- 1 Cup Oats
- 2 Cups Rice Puffs
METHOD
-
Place the butter, coconut sugar and honey into a saucepan on medium heat. Bring to the boil, stirring occasionally, then turn off the heat.
-
Meanwhile, roughly chop the apricot slice, pistachios and the fruit and nut mix. Place into a bowl. In the same bowl, add the pepitas, chia seeds, desiccated coconut, oats and rice bubbles.
-
Pour in the hot honey butter mixture and quickly stir to coat all the dry ingredients.
-
Line a shallow baking tray and add the mixture. Use a rubber spatula or wooden spoon to spread all over the tray and press down firmly until it is flat and has hardened.
- Place the tray into the fridge for at least 1 hour until fully set and hard. Remove from fridge and cut across both sides into equal rectangular muesli bar pieces.
Cook's Note
- Substitute with any other dry fruit or nut of your choice.
- Keep in the fridge for up to 6 weeks.
