Steamed Globe Artichokes with Feta and Herbs Dressing

Ingredients:
- 4 whole Globe Artichokes
- ½ Cup Sour Cream
- 1/3 Cup Mayonnaise
- 1 Tbsp Chopped Dill
- ½ Bunch Chives
- ½ Lemon Juice
- 80g Danish Feta
- Salt
- Pepper
- 2 Anchovies (Optional)
- ½ Tbsp Dijon Mustard
- 1 Small Garlic clove
Method:

Start by bringing a pot of water to a boil for steaming.

Prepare the artichokes by removing the outer leaves from the stems and trimming any excess stem. Trim the spiky thorns from the top of the leaves using scissors.

Using a serrated knife, cut off the top quarter of each artichoke globe.

Place the prepared artichoke globes in a steamer basket, cover, and steam for 25-30 minutes, or until the leaves easily peel off.

While the artichokes are steaming, prepare the feta dip by placing all the ingredients into a blender and blending until well combined. Transfer the dip to a bowl.

Once the artichokes are tender, remove them from the steamer and arrange them on a serving platter.

To enjoy the artichokes, peel each petal and dip it into the feta dressing. Place the pulpy portion of the petal in your mouth and scrape it off with your teeth, discarding the remaining tough petal.

After removing all the petals, you'll reach the small, purple, soft tips. Remove them all at once until you reach the inedible fuzzy part known as the choke. Use a knife or spoon to remove and discard the hairy choke.

Finally, once you reach the heart of the artichoke, cut it into four pieces and enjoy it with the feta dressing.
