Ingredients

Noodle Dough

  • 300g plain flour
  • 150ml water
  • 1/2 tsp salt

Fragrant Garlic-Ginger Sauce

  • 3 tbsp neutral oil
  • 2 tsp minced garlic
  • 2 tsp minced ginger
  • 1 tsp chilli flakes
  • 1 tsp cumin
  • 1 tsp white sesame seeds
  • 2 tbsp chopped coriander
  • 3 tbsp light soy sauce
  • To serve: Asian greens (e.g. baby buk choy)

Method

  1. In a mixing bowl, stir together flour, salt and water with chopsticks until a shaggy dough forms. Use your hands to combine and knead for 5 mins or until a smooth dough forms. Cover and rest for 15 mins.
  2. Bring a large pot of water to a very gentle simmer. Using a pair of oiled kitchen scissors, snip the dough into the water. Once you have cut all the dough, turn the heat to high and bring the pot to a boil. Cook noodles for about 2-3 mins (they should float to the surface) then use a slotted spoon to remove from the pot. You can cook any green vegetables you are using to the water now as well.
  3. Divide the noodles and cooked Asian greens across 2 bowls. Divide the garlic, ginger, chilli flakes, cumin, sesame seeds and coriander over the noodles. Heat up the oil then pour this over garlic-ginger mix so it sizzles. Add the soy sauce and mix to combine. Devour immediately!
