Scissor-Cut Noodles
Homemade noodles in under 30 minutes? Grab some scissors and you’re halfway there! ✂️🍜
Scissor-cut noodles might just be the easiest and quickest way to make fresh noodles at home! Called jian dao mian, this traditional Northern Chinese method is a perfect introduction to homemade noodles - no fancy equipment needed. I whipped this up with a fragrant garlic-ginger sauce and some Asian greens for a complete meal in under 30 mins - perfect for a mid-week meal!

Ingredients
Noodle Dough
- 300g plain flour
- 150ml water
- 1/2 tsp salt
Fragrant Garlic-Ginger Sauce
- 3 tbsp neutral oil
- 2 tsp minced garlic
- 2 tsp minced ginger
- 1 tsp chilli flakes
- 1 tsp cumin
- 1 tsp white sesame seeds
- 2 tbsp chopped coriander
- 3 tbsp light soy sauce
- To serve: Asian greens (e.g. baby buk choy)
Method
- In a mixing bowl, stir together flour, salt and water with chopsticks until a shaggy dough forms. Use your hands to combine and knead for 5 mins or until a smooth dough forms. Cover and rest for 15 mins.
- Bring a large pot of water to a very gentle simmer. Using a pair of oiled kitchen scissors, snip the dough into the water. Once you have cut all the dough, turn the heat to high and bring the pot to a boil. Cook noodles for about 2-3 mins (they should float to the surface) then use a slotted spoon to remove from the pot. You can cook any green vegetables you are using to the water now as well.
- Divide the noodles and cooked Asian greens across 2 bowls. Divide the garlic, ginger, chilli flakes, cumin, sesame seeds and coriander over the noodles. Heat up the oil then pour this over garlic-ginger mix so it sizzles. Add the soy sauce and mix to combine. Devour immediately!
