Salmon Blinis

Ingredients:
- 200ml Crème Fraiche
- ½ Bunch Dill
- 120g Capers
- 1 Lemon
- 200g Mini Pancakes
- 200g Smoked Salmon
METHOD
1. Place the Crème Fraiche into a mixing bowl.
2. Drain the capers and reserve some for garnishing.
3. Finely chop the capers and add to the bowl with the Crème Fraiche.
4. Pick and finely chop the dill. Add to the bowl reserving some leaves whole for garnishing.
5. Grate the zest of half a lemon and add to the bowl.
6. Season with salt and pepper and mix all the ingredients well until combined.
7. Finely slice the smoked salmon and set aside.
8. Place the mini pancakes on a platter and add 1 tsp of the crème fraiche on each mini pancake.
9. Add some smoked salmon and follow with some more crème fraiche. Garnish with capers and dill leaves.
