Roasted Potatoes with Herb Salsa

Serves: 4
Ingredients:
- 1 Kg Cocktail potatoes
- 3 Garlic Cloves
- ½ Bunch Parsley
- ½ Bunch Mint
- 2 Anchovies
- 1 Tbsp Capers
- 1 Tbsp Lemon Juice
- Salt and Pepper
- ¼ Cup Olive oil
METHOD
1. Preheat the oven to 240°C.
2. Place the potatoes into a pot with salted water. Bring to the boil and cook for 20mins until potatoes are soft but not mushy.
3. Meanwhile, wash and pick the parsley and the coriander.
4. Place the herbs into a blender. Add 1 garlic clove, add the anchovies, capers and lemon juice. Season with salt and pepper and blitz until well combined and vibrant green.
5. Drain well the potatoes once soft and place on a baking tray lined with baking paper. Let them dry with their own heat for 5 mins.
6. Using a cup or a small plate, flatten the potatoes just enough to break them down into a patty.
7. Then drizzle generously with olive oil, season with salt and pepper, crush the garlic cloves with the skin on and add to the potatoes. Mix well and place into the preheated oven. Cook for 30mins until golden and crispy.
8. Remove potatoes from the oven and toss them with the herb salsa until well coated.
9. Serve hot or warm with more herbed salsa on the side.
