Roasted Asparagus with Pancetta and Fior Di Latte

Ingredients:
- 3 Asparagus Bunch
- 200g Fior Di Latte
- 70g Pancetta Diced
- Salt
- Pepper
- Olive Oil
Method:

Preheat your oven to 220°C.

Trim the woody ends from the asparagus, then arrange them on a baking tray lined with parchment paper.

Drizzle olive oil over the asparagus, season with salt and pepper, and give them a good toss.

Grate or tear Fior di Latte cheese onto the lower half of the asparagus, then sprinkle with diced pancetta.

Slide the tray into the oven and bake for 15 minutes (adjust time for thinner asparagus) until they're tender and beautifully golden brown.

Once done, remove them from the oven and plate up while they're piping hot.
Tips:
- If you're working with thinner asparagus, switch your oven to the high-heat grill function and halve the cooking time for perfect results.
- These make an excellent side dish for grilled meats, fish, or vegetables.
- Feel free to use chorizo, bacon, or prosciutto instead of pancetta if you prefer.
