Prawn, Mango & Blood Orange Salad

Ingredients:
- 1 Large Mango
- 1-2 Blood Oranges
- 1 Avocado
- ½ Bunch Coriander
- ¼ Spanish Onion
- 500-700g Raw Prawns
- 4 Garlic Cloves
- ½ Tbsp Chilli Flakes
- 1 ½ Tbsp Butter
- 2 Tbsp Agave
- 1 Lemon
- 2 ½ Tbsp Olive oil
- ½ Punnet Rocket
- Salt & Pepper
Method:
- Cut the cheeks of the mango and finely slice them.
- Peel the orange and cut it into thin disks. Finely slice the Spanish onion. Finely slice the avocado. Wash and finely chop the coriander. Set aside.
- Place the prawns into a mixing bowl. Add the chopped coriander (reserving ½ Tbsp for the dressing). Add the chili flakes, crush 3 of the garlic cloves and season with salt and pepper. Toss well and set aside.
- For the dressing, add the agave, the juice of half a lemon, 1 crushed garlic and the remaining chopped coriander to a bowl and mix until combined.
- Bring a large frying pan to medium high heat, drizzle with olive oil and add the prawns. Sautee for 3mins. Add the butter and squeeze the juice of half a lemon. Sauté for a further minute and set aside. (Cook them it in two batches if the pan is not big enough)
- Add the rocket to a platter. Scatter the mango, Spanish onion, avocado and blood orange, add the prawns on top of the salad.
- Drizzle with the agave lemon dressing and enjoy!
