Poachers Sicilian Smoked Chicken Pizza With Olives

Ingredients
- 2 Pizza Base
- 6 Tbsp Tomato Basil Sauce
- 200g Poachers Smoked chicken Breast
- ½ Cup pitted Kalamata Olives
- ¼ Spanish Onion
- 2 Cups Mozzarella Cheese
- 100g Baby Spinach
- Olive oil
- Salt & Pepper
Method
- Preheat the oven to 220-240°C.
- Place the Pizza on a baking tray.
- Spread 3-4 Tbsp of tomato basil sauce on tip of the pizza base.
- Remove the net that wraps around the breast and finely slice the chicken. Set aside.
- Sprinkle equal amounts of onions, olives and half of the chicken on each pizza.
- Grate the cheese on top and season with salt.
- Place into the oven and cook for 8-10mins until golden brown.
- Remove from the oven and scatter some spinach leaves.
- Drizzle with olive oil and crack some fresh pepper. Cut it into 6 slices and serve.
