Poachers Sicilian Smoked Chicken Pizza With Olives

Ingredients 

  • 2 Pizza Base 
  • 6 Tbsp Tomato Basil Sauce 
  • 200g Poachers Smoked chicken Breast 
  • ½ Cup pitted Kalamata Olives 
  • ¼ Spanish Onion
  • 2 Cups Mozzarella Cheese 
  • 100g Baby Spinach 
  • Olive oil 
  • Salt & Pepper 

Method

  1. Preheat the oven to 220-240°C.
  2. Place the Pizza on a baking tray.
  3. Spread 3-4 Tbsp of tomato basil sauce on tip of the pizza base.
  4. Remove the net that wraps around the breast and finely slice the chicken. Set aside. 
  5. Sprinkle equal amounts of onions, olives and half of the chicken on each pizza. 
  6. Grate the cheese on top and season with salt. 
  7. Place into the oven and cook for 8-10mins until golden brown. 
  8. Remove from the oven and scatter some spinach leaves. 
  9. Drizzle with olive oil and crack some fresh pepper. Cut it into 6 slices and serve.
