Peach Cobbler

Ingredients
- 1kg ripe peaches, peeled, cut into chunks (stones removed)
- ½ cup caster sugar
- ¼ tsp each of ground nutmeg and cinnamon
- 3 tsp cornflour
- 1 Tbsp lemon juice
- 30g butter, cubed
Topping
- 1 ½ cups self-raising flour
- ⅓ cup caster sugar
- Pinch of salt
- 125g butter, chopped
- ⅓ cup buttermilk
- 2 tsp vanilla essence
Method
- Preheat oven to 180°C, fan-forced. Grease medium baking dish.
- Place peaches, sugar, spices, cornflour, lemon juice and butter into baking dish. Mix gently to combine. Bake in oven for 15 minutes.
- Meanwhile, make topping. Place flour, sugar and salt into bowl electric mixer bowl. Mix on low until combined.
- Add butter, mix until like large breadcrumbs. Add buttermilk and vanilla and mix until just combined.
- Remove peaches from oven, drop small spoonful of topping over peaches. Don’t worry if there are gaps. Bake 40-45 minutes or until golden.
Tip
Peel with ease!
Cut a cross into skin on base of each peach. Plunge peaches into boiling water, simmer for about 1 minute or until skin starts to lift at the cut. Drain, add to bowl of iced water. When cool enough to handle, skin should peel away easily.
