Moon Bok with Black Bean Sauce

Serves: 4
Ingredients:
- 2 Bunches Moon Buk
- 2 Birds Eye Chilli
- 70ml Black Bean Sauce
- Cooking oil
Method:
- Prepare the Moon Bok by removing the older outer leaves. Halve the larger ones lengthwise and leave the smaller ones whole.
- Heat a large frying pan over high heat and drizzle it with some cooking oil. Once hot, sear the Moon Bok with the inner side facing down for 2 minutes until golden. Avoid overcrowding the pan; it's better to do this in two batches.
- Remove the seared Moon Bok from the pan and set them aside. Repeat the process with the remaining Moon Bok until they are all seared.
- Add the black bean sauce, sweet chilli sauce, and ¼ cup of water to the pan. Bring it to a boil over medium heat.
- Return all the Moon Bok to the pan and toss them well until they become sticky and thoroughly cooked.
- Finely chop 1 or 2 chillies and sprinkle them over the Moon Bok.
- Serve hot and add more dressing if desired.
Tips:
- Serve as a side dish with rice and any type of protein.
- Feel free to use other types of Asian greens in this recipe.
- To make it a main dish, you can add tofu, noodles, or meat if you wish.
