Mango Brulee

Prep time: 15 mins  
Cooking time: 15-20 mins 
Serves: 4 

Ingredients:

  • 2 Cups Thickened Cream  
  • 140g Sugar 
  • 1 ½ Cups Mango Puree (approx. 2 mangoes)  
  • 3 Tbsp Lemon Juice  
  • 4 Tbsp Sugar 

Method: 

  1. Place the cream and the sugar into a saucepan. Bring to the boil and reduce heat to medium low. Simmer for 5 mins and remove from the heat.  
  2. Add the lemon juice. And stir through until thickens.  
  3. Meanwhile, puree the mangos and add to the cream. Whisk through it. 
  4. Once the mixture is at room temperature, pour it into 2 or 4 heatproof ramekins and place it into the freezer for 3 hrs. Or put it into the fridge overnight. 
  5. Once set, sprinkle some sugar on top and blowtorch until caramelised.
