Mango Brulee

Serves: 4
Ingredients:
- 2 Cups Thickened Cream
- 140g Sugar
- 1 ½ Cups Mango Puree (approx. 2 mangoes)
- 3 Tbsp Lemon Juice
- 4 Tbsp Sugar
Method:
- Place the cream and the sugar into a saucepan. Bring to the boil and reduce heat to medium low. Simmer for 5 mins and remove from the heat.
- Add the lemon juice. And stir through until thickens.
- Meanwhile, puree the mangos and add to the cream. Whisk through it.
- Once the mixture is at room temperature, pour it into 2 or 4 heatproof ramekins and place it into the freezer for 3 hrs. Or put it into the fridge overnight.
- Once set, sprinkle some sugar on top and blowtorch until caramelised.
