Lamb Meatballs with Chopped Greek Salad



Serves: 4 

Ingredients

Meatballs

  • 500g lamb mince
  • ½ bunch oregano leaves, torn
  • 1 tbs Dijon mustard
  • 1 tsp dried oregano
  • 2 tablespoons panko bread crumbs
  • 1 egg
  • Salt flakes and cracked pepper to season 


Chopped Greek salad 

  • 150g Greek feta
  • 1 cucumber, chopped
  • 1 banana pepper, chopped
  • 2 tomatoes, chopped
  • 1 red onion, chopped
  • ½ black olives
  • ¼ (60ml) extra virgin olive oil
  • ½ teaspoon dried oregano
  • Juice of 1 lemon  


Method:

1. Combine all the meatball ingredients into a bowl and mix to combine. Season with salt flakes and cracked pepper. Roll mixture into 1 tablespoon balls. 

2. Heat a chargrill pan over medium heat and cook meatballs for 4-5 minutes on each side until chargrilled. 

3. For the chopped Greek salad combine all the ingredients into a bowl and dress with oil and lemon. 

4. Serve meatballs alongside the chopped Greek salad.
