Sichuan Pepper + Chilli + Garlic Olive Oil
A spicy number to add over rice, noodles, or bread.
Ingredients

250ml olive oil
-
1 Tbsp Sichaun peppercorn

6 dried red chillis
-
4 garlic cloves (skins removed, smashed)

1 Tbsp sweet chilli flakes (optional)
Method
- Add the oil, peppercorn, chillis and garlic to a saucepan and simmer for about 10 minutes or until the garlic starts browning.
- Turn off the heat, remove the garlic and add in your chilli flakes (if using).
- Cool oil, then strain into a jar.
Curry Leaf + Ginger + Turmeric Olive Oil
Warm and earthy oil perfect with roast veggies
Ingredients

250ml olive oil

20 curry leaves

3cm ginger (sliced)

3cm turmeric (sliced)

1 tsp ground turmeric (optional)
Method

Add the oil, curry leaves, ginger and turmeric to a saucepan and simmer on low for about 10 minutes.

Turn off the heat and add in your turmeric powder (if using).

Cool oil, then strain into a jar.
Lemongrass + Kaffir Lime + Galangal Olive Oil
Fragrant citrus finish for salads

5 kaffir lime leaves (slightly torn)

1 lemongrass (sliced)

3cm galangal (sliced)
Method

Add the oil, lime leaves, lemongrass and galangal to a saucepan and simmer on low for about 10 minutes.
