Honey & Miso Baked Salmon with Wasabi Slaw

Ingredients 

  • 2 ½ Tbsp Miso Paste
  • 1/3 Cup Mirin
  • 3 Tbsp Honey
  • 1 Knob Ginger
  • 2 Garlic Cloves
  • 1/3 Cup Soy Sauce
  • 1 Lemon
  • 4 Tbsp Mayonnaise
  • 1 Tbsp Wasabi Paste
  • 1 tsp Sesame Oil
  • 1 Whole Salmon Side (HFM)
  • 2 Packets Premade Slaw
  • 1 Tbsp Sesame Seeds (Optional)
  • 1 Tbsp Black Sesame Seeds (Optional)
  • 2 Bunches Bok Choy
  • Salt & Pepper

Method

  1. Preheat the oven to 220°C.
  2. In a bowl, place the miso paste, mirin, honey, soy sauce, the juice of half a lemon, grate the garlic and the ginger, and mix with a whisk.
  3. In a separate bowl, add the mayonnaise, the wasabi, the juice of half a lemon, 1 tsp of sesame oil, and season with salt. Mix well until combined.
  4. Place the salmon side on a baking tray lined with baking paper and brush it with half of the honey and miso marinade.
  5. Place the salmon into the oven and bake for 12-15 minutes.
  6. Meanwhile, cut the Bok Choy in halves and place them on a baking tray. Brush them with the remaining marinade. Place them into the oven and cook them for 10 minutes.
  7. Place the slaw into a serving bowl, add the wasabi mayonnaise, sprinkle with the sesame seeds, and season with salt. Mix well.
  8. Remove the salmon from the oven and carefully, without burning the paper, blowtorch it until caramelized. Alternatively, place it on the closest shelf to the oven grill and grill it for a few minutes until caramelized.
  9. Remove the Bok Choy from the oven and blowtorch or grill to caramelize.
  10. Serve the salmon with wasabi slaw and Bok Choy.
