HFM Beef Nachos

Cooking time: 35-40 mins 
Serves: 4

Ingredients 

  • 500g Beef Mince  
  • 2 Tbsp Mexican Spice Mix  
  • ½ Bunch Coriander  
  • 375g HFM Pasta Sauce  
  • 1 Red Kidney Beans  
  • HFM Corn Chips  
  • 500g Grated Mozzarella or Grated Cheddar Cheese  
  • 5 Tbsp Sour Cream  
  • 1 Punnet HFM Guacamole  
  • Olive oil  
  • Salt and Pepper 

Method 

  1. Bring a pot or a casserole type dish to high heat.  

  2. Drizzle with olive oil and add the mince once hot. 

  3. Break down the meat while cooking until brown. Season with salt and pepper and add the Mexican spice mix. Stir well and cook for 3 mins.  

  4. Add the sauce and bring tom the boil. Turn down to medium heat and add the red kidney beans. Stir and let it cook for 20mins stirring occasionally. 

  5. Preheat the oven to 200°C.  

  6. Wash and finely chop the coriander. Add some to the mince and reserve some for garnishing.  

  7. Once the meat is ready, place the corn chips on a baking tray and add the cheese. Place into the oven for 5 mins until the cheese is melted.  

  8. Remove corn chip from the oven and add some of the mice on top, add guacamole and sour cream. Garnish with coriander leaves and enjoy.
