Grilled Tomahawk with Garlic Herb Butter

Serves: 4

Ingredients 

  • 1 Tomahawk Steak
  • 100g Butter
  • 2 Garlic Cloves
  • 2 Anchovies
  • 1 Tbsp Chopped Rosemary
  • 1 Tbsp Chopped Thyme
  • 1 ½ Tbsp Capers
  • 500-600g Heirloom Tomatoes
  • 1-2 Bunches of Broccolini
  • 150g Goat’s Cheese
  • 1 Bunch Chives
  • Salt and Pepper
  • Olive Oil 

Method

  1. Bring a BBQ grill to high heat.
  2. Remove the butter and the steak from the fridge at least 1 hour before cooking.
  3. Season the tomahawk steak with salt and pepper and drizzle with olive oil.
  4. Pick and finely chop the rosemary and the thyme. Finely chop the chives and reserve them for garnishing. Rinse the capers and finely chop them.
  5. Once the butter is soft at room temperature, place it in a bowl. Crush the garlic on top and add the chopped herbs. Add the anchovies and season with salt and pepper.
  6. Using a fork, mix and mash the butter until well combined and the anchovies are well mixed with the butter.
  7. Place the butter on top of a sheet of baking paper. Then roll it into a cylinder shape and place it in the fridge for at least 15 minutes.
  8. Once the BBQ is hot, place the steak and sear for 3-5 minutes on each side until golden brown. Then place the steak on a pan or in a small tray.
