Grilled Tomahawk with Garlic Herb Butter

Ingredients
- 1 Tomahawk Steak
- 100g Butter
- 2 Garlic Cloves
- 2 Anchovies
- 1 Tbsp Chopped Rosemary
- 1 Tbsp Chopped Thyme
- 1 ½ Tbsp Capers
- 500-600g Heirloom Tomatoes
- 1-2 Bunches of Broccolini
- 150g Goat’s Cheese
- 1 Bunch Chives
- Salt and Pepper
- Olive Oil
Method
- Bring a BBQ grill to high heat.
- Remove the butter and the steak from the fridge at least 1 hour before cooking.
- Season the tomahawk steak with salt and pepper and drizzle with olive oil.
- Pick and finely chop the rosemary and the thyme. Finely chop the chives and reserve them for garnishing. Rinse the capers and finely chop them.
- Once the butter is soft at room temperature, place it in a bowl. Crush the garlic on top and add the chopped herbs. Add the anchovies and season with salt and pepper.
- Using a fork, mix and mash the butter until well combined and the anchovies are well mixed with the butter.
- Place the butter on top of a sheet of baking paper. Then roll it into a cylinder shape and place it in the fridge for at least 15 minutes.
- Once the BBQ is hot, place the steak and sear for 3-5 minutes on each side until golden brown. Then place the steak on a pan or in a small tray.
