Grilled Peaches & Grapes Salad with Blue Cheese Dressing

Serves: 4-6
Ingredients:
- 3 Peaches
- 200g Grapes
- 150g Macadamia Nuts
- ½ Tbsp Butter
- 1 Tbsp Honey
- 100g Blue Cheese
- ¼ Cup Sour Cream
- ¼ Cup Mayo
- ½ Tbsp Worcestershire Sauce
- 1 Lemon
- 120g punnet Mix Salad Leaves
- Salt & Pepper
Method:
- Bring a griddle or a BBQ to high heat.
- Cut the cheeks of the peaches and grill them on each side for 2-3 mins, remove from grill and let it cool.
- Finely slice the grapes and set aside.
- Roughly chop the Macadamia nuts. Melt the butter in a small frying pan on medium heat and add the macadamia nuts. Toss through and add the honey. Stir until caramelizes and golden brown. Remove from pan and set aside to cool.
- Make the dressing by blending the sour cream, mayonnaise, Worcestershire sauce, the juice of half a lemon, salt, pepper and ¾ of the blue cheese. Blitz well until combined.
- Dress the salad leaves in a bowl with the dressing and scatter the nuts, grapes, and slices of the grilled peaches on top of the salad. Tear some pieces of blue cheese on top and serve.
