Grilled Nectarines Caprese Salad

Serves: 4–6

Ingredients:

  • 5 nectarines
  • 2 buffalo mozzarella cheese
  • ¼ bunch basil
  • 1½ tbsp caramelized balsamic vinegar (HFM)
  • Olive oil
  • Salt & pepper

Method:

  1. Preheat a BBQ or griddle to high heat.
  2. Slice the cheeks off the nectarines and place them on a plate. Drizzle with olive oil and season with salt and pepper.
  3. Drain the buffalo mozzarella and slice it into thin slices.
  4. Pick the basil leaves and set aside.
  5. Once the grill is hot, place the nectarine cheeks on the grill and cook for approximately 3–5 minutes until softened and charred. Turn and cook for another 2 minutes.
  6. Remove from the grill and set aside.
  7. Arrange the nectarines on a platter with the basil leaves and buffalo mozzarella slices. Season with salt and pepper, and drizzle with olive oil and caramelized balsamic vinegar. Enjoy!
