Grilled Asparagus with Parmesan, Greek Lemon Dressing, and Pine Nuts

Ingredients:
- 20g Pine nuts
- 3 Bunches Asparagus
- 4 Tbsp Greek Lemon Dressing (Birch & Waite)
- 50g Parmesan Cheese
- Salt and Pepper
- Olive oil
METHOD
1. Preheat a BBQ or Griddle to high heat. Preheat the oven to 180°C.
2. Once the oven is hot, place the pine nuts on a baking tray and into the oven for approx. 5 mins until golden brown. Remove from oven and let them cool down.
3. Cut off the woodie bottom ends of the asparagus and discard.
4. Drizzle the asparagus with olive oil and season with salt and pepper.
5. Cook the asparagus in the grill for approx. 3-5mins until lightly charred and depending on the size and the thickens of the asparagus.
6. Remove from grill and place on a plate.
7. Drizzle with the Greek lemon dressing and grate some parmesan cheese on top.
