Gamze Gold Bacon Pancakes with Candied Walnuts and Blueberries

Ingredients 

  • 1 Cup Plain Flour
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • ¾ Cup Milk
  • 1 Egg
  • 1 tsp Vanilla Essence
  • 1 Tbsp Melted Butter

Or replace above ingredients with premade pancake mix.

  • 400g Gamze Gold Bacon
  • 2 Punnet Blueberries
  • 25g Butter
  • 1/2 Cup Walnuts
  • 200ml Maple Syrup
  • Pinch of Salt
  • Olive Oil

Method

  1. If making the pancakes from scratch, mix the dry ingredients in a bowl. Then mix the wet ingredients in a separate bowl. Slowly add the wet ingredients to the dry ingredients and mix through until combined. Or, follow the packet instructions if using premade mix.  
  2. Heat up a small pan to medium heat. Spread ½ tsp of butter to the pan and add half a ladle of the pancake mix. Cook for 2-3 mins until bubbles show up on the top. Carefully turn over and cook for a further 2 mins until golden brown. Repeat until all the pancakes are done. 
  3. Meanwhile, cook the bacon in a frying pan on medium high heat for approx. 3-4mins on each side until golden brown. Remove from pan and keep warm.  
  4. On a separate frying pan, on medium heat, place the walnuts and drizzle with olive oil. Add ¼ cup of maple syrup, ½ Tbsp of butter and sprinkle with salt. Stir through and cook for 3 mins until caramelized. Remove from heat and set aside on a plate. Once cold, break them down with your fingers. 
  5. Slice the blueberries if desired and reheat the pancakes. Serve pancakes with Gamze Gold Bacon, drizzle with maple syrup, sprinkle with candied walnuts and sliced blueberries, scatter with gold leaves and serve warm.
