Fluffy Father's Day Pancakes

Serves: 4
Ingredients:
- 2 Cups of Self Raising Flour
- 1tsp Baking Soda
- 1 Pinch of Salt
- 3 tbsp Sugar
- 1 Egg
- 1 ½ Cup Butter Milk
- 2 tsp Vanilla Extract
- 2 tbsp Melted Butter + Extra for Cooking
- 100ml Maple Syrup
- 2 Bananas
- 2 Punnets of Blueberries
Method:

Place all the dry ingredients in a mixing bowl.

Place the egg, butter milk and vanilla extract in a mixing bowl and whisk until combined.

Slowly add the dry ingredients to the wet ingredients while whisking until combined into a batter.

Melt the 2 tbsp of butter and add to the batter. Mix well and set aside.

Bring a medium size frying pan to medium heat and add1 tsp of butter. Let it melt and once bubbling add ¼ cup of the batter into the pan. Let it cook for 2-3mins until golden brown on the bottom and little bubbles appear on the top.
- Carefully turnover using a spatula and cook for further 2 mins. Repeat with the rest of the batter.
- Serve warm with butter, maple syrup banana slices and blueberries.
Tips:
- You can also serve the pancakes with mixed berries, a squeeze of lemon juice or even dust them with icing sugar and cinnamon if desired.
- If you don't have any butter milk you can use milk.
