Fluffy Father's Day Pancakes

Prep Time: 5 minutes

Cooking Time: 20 minutes

Serves: 4

Ingredients:

  • 2 Cups of Self Raising Flour  
  • 1tsp Baking Soda  
  • 1 Pinch of Salt 
  • 3 tbsp Sugar  
  • 1 Egg 
  • 1 ½ Cup Butter Milk  
  • 2 tsp Vanilla Extract  
  • 2 tbsp Melted Butter + Extra for Cooking  
  • 100ml Maple Syrup  
  • 2 Bananas  
  • 2 Punnets of Blueberries  
 

Method:

  1. Place all the dry ingredients in a mixing bowl. 

  2. Place the egg, butter milk and vanilla extract in a mixing bowl and whisk until combined.  

  3. Slowly add the dry ingredients to the wet ingredients while whisking until combined into a batter. 

  4. Melt the 2 tbsp of butter and add to the batter. Mix well and set aside.  

  5. Bring a medium size frying pan to medium heat and add1 tsp of butter. Let it melt and once bubbling add ¼ cup of the batter into the pan. Let it cook for 2-3mins until golden brown on the bottom and little bubbles appear on the top.
     
  6. Carefully turnover using a spatula and cook for further 2 mins. Repeat with the rest of the batter.

  7. Serve warm with butter, maple syrup banana slices and blueberries.  

Tips: 

  • You can also serve the pancakes with mixed berries, a squeeze of lemon juice or even dust them with icing sugar and cinnamon if desired.  
  • If you don't have any butter milk you can use milk.
