Crunchy Sun-dried Tomato Dip

Ingredients

200gm sun-dried tomatoes

¼ cup of oil from the sun-dried tomatoes

60gm of pine nuts

100gm feta
-
2 garlic cloves

1 tsp cumin

½ tsp salt

6 basil leaves

1 tbsp lemon

Crackers, for serving
Method

Add the sun-dried tomatoes, oil, pine nuts, garlic, cumin, salt, basil and lemon into a food processor and blitz until fully blended.

Serve the dip in a bowl and sprinkle over extra sun-dried tomatoes, pine nuts, thinly sliced basil and a drizzle of olive oil. Serve with crackers and enjoy!
