Chipotle & Maple Roasted Dutch Carrots

Ingredients
- 2 Bunch Dutch Carrots
- ¼ cup Chipotle & Maple Sauce
- 1 Tbsp Toasted Sesame Seeds
- Salt and pepper
- Olive Oil
- Micro Herbs (Optional)
Method
- Preheat the oven to 200°C.
- Cut off the stems of the carrots leaving just 1 inch of it attached.
- Wash the carrots and pat dry them. Cut them in half lengthways.
- Place the carrots on a baking tray lined with baking paper. Add 2 Tbsp of water. Drizzle with olive oil, drizzle with the Chipotle Maple sauce, season with salt and pepper and toss well.
- Place in the oven and roast for 20 - 25 mins until softened and golden brown.
- Remove from oven and sprinkle with the toasted sesame seeds.
- Serve hot or warm.
Chef's tips:
- Serve roasted Dutch Carrots as a side dish with your favourite roast.
- Toast the sesame seeds in the oven or in a frying pan for few minutes until golden.
- Garnish with micro herbs or serve with salad leaves if desired.
