Chicken Tagine

Golden and juicy chicken tagine
Preparation
Joint the chicken breast (using poultry shears or strong kitchen scissors)or use chicken tenderloins
Rinse the chicken pieces well in cold water to clean and then pat dry well with kitchen paper
Ingredients
- Chicken tenderloins or jointed chicken breast
- Moroccan Rub
- Extra Virgin Olive Oil
- Salt
- Pepper
- Onion
- Garlic
- Can of diced tomatoes
- 1-2 cups of chicken stock
- Green olives (handful)
- Chunky piece of preserved lemon
- Cous Cous
Method
Rub prepared chicken with spicy Moroccan rub. Rub the mix over both sides, and then drizzle with a little olive oil and season with sea salt flakes.
Brown chicken pieces in large deep frying pan, brown pieces well on all sides
Add chopped onion and garlic, cook for 1-2 minutes
Add diced tomatoes, chicken stock, olives and lemon, cook for a further 18-20 minutes or until chicken is cooked all the way through.
Serve with cous cous
