Cheesy Cavatelli Pasta & Spicy Pork Sausage

Ingredients 

  • ½ Fennel Bulb 150g
  • 1 Brown Onion 
  • 3 Garlic Cloves 
  • 500g Spicy Pork Sausage 
  • 450g Tomato Basil sauce 
  • 500g Cavatelli Pasta
  • 300g Mozzarella Cheese 
  • ¼ Bunch Parsley 
  • Salt and Pepper
  • Olive Oil 

Method

  1. Preheat the oven to 200°C. Bring a pot with salted water to the boil for the pasta. 
  2. Finely dice the fennel, dice the onion, finely chop the garlic and finely chop the parsley.
  3. Bring a large frying pan or casserole type dish to medium high heat, drizzle with olive oil and add the fennel. Sauté for 3-5 mins stirring occasionally until it starts to soften.
  4. Add the onion and the garlic and cook for further 3 mins while stirring. 
  5. Meanwhile, finely slice the sausages and add to the pan. Stir through and let it cook for approx. 5mins.
  6. Place the pasta into the water and cook it ¾ of the way as per packet time suggestion.
  7. Add the tomato sauce and rinse the jar with ¾ cup of pasta water. season with salt and pepper and cook for 10 mins on medium low heat.
  8. Once pasta is cooked ¾ of the way, drain and add to the sauce. Stir through until well combined with the sauce.
  9. Grate the mozzarella cheese on top and place it into the oven turn to grill function for 3-4 mins until cheese is melted and golden brown. 
  10. Finely chop some parsley and garnish to serve.
