Cheesy Cavatelli Pasta & Spicy Pork Sausage

Ingredients
- ½ Fennel Bulb 150g
- 1 Brown Onion
- 3 Garlic Cloves
- 500g Spicy Pork Sausage
- 450g Tomato Basil sauce
- 500g Cavatelli Pasta
- 300g Mozzarella Cheese
- ¼ Bunch Parsley
- Salt and Pepper
- Olive Oil
Method
- Preheat the oven to 200°C. Bring a pot with salted water to the boil for the pasta.
- Finely dice the fennel, dice the onion, finely chop the garlic and finely chop the parsley.
- Bring a large frying pan or casserole type dish to medium high heat, drizzle with olive oil and add the fennel. Sauté for 3-5 mins stirring occasionally until it starts to soften.
- Add the onion and the garlic and cook for further 3 mins while stirring.
- Meanwhile, finely slice the sausages and add to the pan. Stir through and let it cook for approx. 5mins.
- Place the pasta into the water and cook it ¾ of the way as per packet time suggestion.
- Add the tomato sauce and rinse the jar with ¾ cup of pasta water. season with salt and pepper and cook for 10 mins on medium low heat.
- Once pasta is cooked ¾ of the way, drain and add to the sauce. Stir through until well combined with the sauce.
- Grate the mozzarella cheese on top and place it into the oven turn to grill function for 3-4 mins until cheese is melted and golden brown.
- Finely chop some parsley and garnish to serve.
