Caramelised Banana Pancakes

Indulge in the perfect breakfast comfort with these caramelised banana pancakes! Whizz up a batch effortlessly in the blender, infusing each bite with sweet notes of honey, cinnamon, and banana. Ideal for meal prep too!

Ingredients for the pancakes:
- 1 ripe banana
- 2 organic eggs
- 2 cups rolled oats
- 2 tbsp of unflavoured collagen powder OR coconut flour
- 1 tsp vanilla essence
- 1 tbsp maple syrup
- 1 tsp cinnamon
- ⅓ to ½ cup of almond milk
- ½ tsp baking powder
- Pinch of salt
- Grass-fed unsalted butter or ghee for cooking the pancakes.
Ingredients for the caramelised bananas:
- 2 ripe bananas; sliced (not too thinly)
- 1 tbsp coconut oil
- 1 tbsp honey
- ½ tsp cinnamon

To make the crostini, preheat the oven to 180C fan grill and very thinly slice the
baguette. Lay slices on a sheet pan with baking paper and cover both sides in
a drizzle of olive oil and salt. Toast in the oven for roughly 4 minutes each side
or until browned and crispy. Leave the oven on the same setting for the
cheese mixture.- Start by making the caramelised bananas. Add coconut oil, honey, and cinnamon to a small-sized pan on low heat. Mix to combine.
- Once the mixture gets sticky and caramelised, add the sliced bananas and cook for approximately two minutes on each side or until golden. Be sure not to leave them in the pan for too long or they'll become too soft. Transfer the caramelised banana to a plate and set aside.
- Using a high-speed blender or food processor, add all the ingredients for the pancakes and blend to combine. Set the mixture aside to thicken while preparing the pan.
- Using a medium-sized pan over low to medium heat, add some butter or ghee and let it melt. Using around a ¼ cup of batter per pancake, cook for approximately 3 minutes each side or until golden. Repeat this process until no batter remains.
- Serve your pancakes with the caramelised banana, some yoghurt, blueberries, extra honey and chopped walnuts if desired. Dig in and enjoy!
Notes:
- These pancakes are great for meal prep and can last in the fridge in an airtight container for up to a week.
