Blueberry Cobbler
Prep/ Cooking Time: 45 minutes
Serves: 4
Ingredients:
- 250g Blueberries
- 1 tbsp Sugar
- 1 Lemon (zested)
- 50g Butter
- 150g Plain Flour
- 100g Sugar
- ½ tsp Salt
- 1 ½ tsp Baking Powder
- 1 ½ tsp Ginger Powder
- 220ml Milk
- Whipped Cream for Serving
Method:
- Preheat oven to 180°C.
- Add butter to 25cm cast iron pan and place in the oven in the preheated oven to brown (this will take about 10 minutes).
- In a mixing bowl, stir together blueberries, 1 tbsp sugar, and lemon zest. In another bowl, whisk together flour, sugar, salt, baking powder, ginger powder and milk until combined.
- Remove the hot skillet with the melted browned butter from the oven and pour in the batter. Top with the blueberries and bake for 30 minutes or until golden-brown.
- Serve warm with a side of whipped cream.
