Beef Fillet & Oyster Sauce Stir Fry

Ingredients
- 2 Cups Rice (Jasmine, Sushi, Long Grain, etc.)
- 700g Beef Eye Fillet HFM
- 1 Bunch Shallots
- 1 Broccoli
- ½ Bunch Coriander
- 210ml Oyster Sauce Ayam
- Sesame Seeds (Optional)
- Cooking oil
Method
1. Cook the rice as per packet instructions.
2. Pat dry the beef and remove the thin membrane that goes along the fillet using a sharp knife facing upward and slicing it off the meat all the way along the fillet until the silverskin is out.
3. Then, slice the fillet in half and then across into thin strips. Set aside.
4. Wash and cut the shallots into 3cm batons and finely slice the green tips. Wash and finely chop the coriander reserving some leaves for garnishing and cut the broccoli into florets.
5. Bring a wok or a large frying pan to high heat. Drizzle with cooking oil and once hot add the beef strips. Cook for 5-7mins until brown and add the shallot batons.
6. Cook for a further 2 mins and add the oyster sauce. Stir through and bring to the boil. Add ¼ cup of water to the sauce jar and rinse well, add to the wok and add the broccoli. Mix well and let it cook for 5mins stirring occasionally.
7. Serve beef oyster sauce stir-fry with rice and garnish with coriander leaves, shallots, and sesame seeds if desired.
