Banana Crème Caramel

Cooking time: 1hr 
Serves: 8-10

Ingredients:

  • ¾ Cup Caster Sugar  
  • 4 Ripe Bananas 
  • 4 Eggs  
  • 400g Condensed Milk  
  • 1 tsp Vanilla Extract  
  • 1 Cup Coconut Milk Light  
  • 1 Cup Milk   

Method: 

  1. Preheat the oven to 160°C.  
  2. Place the Caster sugar in a saucepan and let it melt on medium heat without stirring. Just move the saucepan on a circular motion until it melts and caramelizes into a dark golden color.  
  3. Quickly pour it over into a round baking dish and spread it all over the bottom of the dish until it hardens.  
  4. Place the bananas in a mixing bowl, then mash them with a potato masher until puree. 
  5. Add the eggs and whisk them together. Add condensed milk, vanilla extract, coconut milk and the milk. Whisk until combined. 
  6. Pass the mixture through a sieve and discard the leftover thick banana pulp.  
  7. Pour the mixture into the baking dish with the caramel. Cover with foil and place into a bigger pan or in a baking tray to cook on Bain Marie. Fill it up with water halfway through and place into the oven.  
  8. Cook for 50mins and remove from the oven. Remove the foil and let it rest until cool. Then refrigerate for at least 2 hrs. or preferably overnight.  
  9. To serve, run around a thin knife around the edge. Put a plate on top of the baking dish and carefully turn around simultaneously to flip it upside down. Cut into portions and enjoy.
