Banana Crème Caramel

Serves: 8-10
Ingredients:
- ¾ Cup Caster Sugar
- 4 Ripe Bananas
- 4 Eggs
- 400g Condensed Milk
- 1 tsp Vanilla Extract
- 1 Cup Coconut Milk Light
- 1 Cup Milk
Method:
- Preheat the oven to 160°C.
- Place the Caster sugar in a saucepan and let it melt on medium heat without stirring. Just move the saucepan on a circular motion until it melts and caramelizes into a dark golden color.
- Quickly pour it over into a round baking dish and spread it all over the bottom of the dish until it hardens.
- Place the bananas in a mixing bowl, then mash them with a potato masher until puree.
- Add the eggs and whisk them together. Add condensed milk, vanilla extract, coconut milk and the milk. Whisk until combined.
- Pass the mixture through a sieve and discard the leftover thick banana pulp.
- Pour the mixture into the baking dish with the caramel. Cover with foil and place into a bigger pan or in a baking tray to cook on Bain Marie. Fill it up with water halfway through and place into the oven.
- Cook for 50mins and remove from the oven. Remove the foil and let it rest until cool. Then refrigerate for at least 2 hrs. or preferably overnight.
- To serve, run around a thin knife around the edge. Put a plate on top of the baking dish and carefully turn around simultaneously to flip it upside down. Cut into portions and enjoy.
