Baked Ocean Trout with Fresh Herb Salsa
Ingredients
Ocean Trout:- 6 uniform sized fillets of ocean trout skin on (salmon may be substituted)
- 2 teaspoons sumac
- 1 tablespoon cumin seed, freshly toasted and crushed
- 1 tablespoon coriander seed, freshly toasted and crushed
- 1 tablespoon sugar
- Sea salt and black pepper
Salsa:
- 1 small Spanish onion finely chopped
- 1/2 bunch coriander, washed and roughly chopped
- 1/4 bunch Italian parsley, washed and roughly chopped
- Handful mint leaves, washed and roughly chopped
- 1/2 cup roasted whole almonds, chopped
- Juice of 1 lemon
- 3 tablespoons extra virgin olive oil
Method
To prepare the ocean trout:- Lay the fish skin side down on baking paper on a baking dish close together so it looks like a whole side of fish.
- Sprinkle with sumac, cumin, coriander, sugar, salt and pepper. Allow to stand for a couple of hours. In cooler weather, on the bench is fine, otherwise refrigerate.
- Bake at 140 degrees for 15 - 25 minutes until medium rare or longer according to preference.
To prepare the salsa:
- Combine all salsa ingredients and spread over the fish after cooking.
Note:
You can also make a dressing to serve on the side of tahini, yoghurt and lemon juice. This can also be spread on the cooked fish before the salsa goes on top.
This recipe uses separate fillets, but if you use the whole side of the fish it is more spectacular.
