Bacon & Egg Roll

Ingredients

  • 300g Bacon (Black Forest Smokehouse) 
  • 3 Tbsp Mayonnaise 
  • 1 Tbsp Horseradish Paste  
  • ½ Tbsp Seeded Mustard  
  • 4x Eggs  
  • 1x Avocado  
  • 1x Baby Cos Lettuce  
  • 4x Nonna Panini Di Casa
  • 2 Tbsp Butter  
  • 2 Tbsp Danish Feta Cheese  
  • 4 Tbsp BBQ Sauce  
  • Salt and Pepper 
  • Olive oil  

Method 

  1. Preheat the oven to 180°C.  
  2. Bring a large frying pan to high heat. Drizzle with olive oil and add the bacon. Cook for 1-2 mins on each side until golden brown and crispy. Remove from pan and place on a tray.  
  3. Add the mayonnaise, horseradish paste, mustard, salt and pepper into a mixing bowl and whisk until combined. Set aside. 
  4. Fry the eggs on a frying pan with some olive oil on medium high heat until the bottom of the egg is golden and crispy.  
  5. Pick the lettuce leaves and wash them. Set aside.  
  6. Finely slice the avocado.  
  7. Slice the bread in half, spread with some butter and toast on a frying pan for approx. 2 mins until golden. 
  8. Warm up the bread rolls and bacon in the oven before serving. 
  9. Spread a generous amount of horseradish mayo and assemble your bread rolls with crispy bacon, lettuce, avocado, egg, crumbled feta cheese and BBQ sauce.
