Avocado Brownie with Raspberries

Serves: 8
Ingredients:
- 1 large avocado
- ¾ cup cocoa powder
- 3 eggs
- ½ cup maple syrup
- 2 tsp vanilla extract
- 1 ½ tsp baking powder
- ½ tsp salt
- ¼ cup milk
- ½ cup flour
- 1 punnet raspberries
- 50g dark chocolate, roughly chopped
Method:
- Preheat oven to 180° and line a small baking tray with baking paper.
- Place the avocado into a bowl and mash until pureed. Add the eggs, cocoa powder, vanilla, maple syrup, salt and baking powder. Mix well.
- Stir in the milk, sift in the flour and mix well. Add half of the chocolate and half of the raspberries, then fold through gently.
- Transfer mixture into the prepared tray.
- Scatter the remaining raspberries on top and press them down halfway into the mixture. Sprinkle over the remaining chopped chocolate
- Bake for 20-25mins until cooked through, but still a little soft.
- Remove from oven and allow to cool to room temperature. Slice into and dust with cocoa powder and icing sugar if you like, to serve.
