Avocado Brownie with Raspberries

Cooking time: 20-25 mins
Serves: 8

Ingredients:

  • 1 large avocado  
  • ¾ cup cocoa powder
  • 3 eggs
  • ½ cup maple syrup
  • 2 tsp vanilla extract  
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¼ cup milk  
  • ½ cup flour  
  • 1 punnet raspberries
  • 50g dark chocolate, roughly chopped  

Method:

  1. Preheat oven to 180° and line a small baking tray with baking paper.  
  2. Place the avocado into a bowl and mash until pureed. Add the eggs, cocoa powder, vanilla, maple syrup, salt and baking powder. Mix well. 
  3. Stir in the milk, sift in the flour and mix well. Add half of the chocolate and half of the raspberries, then fold through gently.  
  4. Transfer mixture into the prepared tray.  
  5. Scatter the remaining raspberries on top and press them down halfway into the mixture. Sprinkle over the remaining chopped chocolate 
  6. Bake for 20-25mins until cooked through, but still a little soft.  
  7. Remove from oven and allow to cool to room temperature. Slice into and dust with cocoa powder and icing sugar if you like, to serve.
