Ingredients

1 Whole Chicken 1.5-2kg

1 Tbsp Peri Peri Spice Mix

500g Green Beans

½ Spanish Onion

½ Bunch Silverbeet

1/3 Cup Roasted macadamia Nuts

70ml Greek Lemon Dressing (Birch & Waite)

1 Large Avocado

Salt & Pepper

Olive Oil
Method

Remove the chicken from the fridge at least ½ hr before cooking. Season with salt and pepper and add the Peri Peri Spice mix. Drizzle with olive oil and rub well until all coated.

Place the chicken into the air fryer and cook at 160°C for 1hr 20mins. Meanwhile, wash the Silverbeet and pat dry well. Remove the white core keeping just the green leaves and finely slice them. Place into a bowl and set aside.

Cut off the tops of the green beans and blanch or steam them until al dente. Refresh under cold water and place with the Silverbeet.

Finely slice the Spanish onion and Roughly chop the macadamia nuts. Add to the bowl.

Slice the avocado and drizzle with the Greek lemon dressing. Toss well and set aside in the fridge.

Once chicken is cooked, remove from the air fryer and let it rest for at least 10 mins.
Serve chicken with the green beans and avocado salad, drizzle the chicken with the air fryer juices and enjoy.
