Air Fryer Chocolate Chip Muffins

Ingredients
- 1 cup plain flour
- ½ cup caster sugar
- ½ tsp baking powder
- ½ cup Greek-style natural yogurt
- ¼ cup light in flavour extra virgin olive oil
- 1 free range x-large egg
- 2 Tbsp milk
- 1 tsp vanilla essence
- 4 Tbsp chocolate chips

In a large bowl combine flour, sugar and baking powder.

Make a well in the centre and add yogurt, oil, egg, milk and vanilla, stirring until just combined. Fold in 2 Tbsp of chocolate chips.

Preheat air fryer on 160C for 5 mins.

Meanwhile, line 9 silicone muffin cases with paper cases. Fill each case evenly, with batter – about 2 Tbsp in each.

Arrange in your air fryer basket, in a single layer - depending on the capacity of your air fryer you may need to cook them in two batches.

Air fry for 15 mins or until muffins are golden brown, and cooked through when a skewer inserted into the centre comes out clean.

Open the air fryer basket and allow muffins to cool for 5 minutes until they are cool enough to handle, then transfer to a rack. Cool for an extra 15 minutes to enjoy warm, or set aside to cool completely, to enjoy at room temperature.
