My pick this week is the Ruby Lou variety of potatoes. It is a red skinned, white fleshed potato. Many red skinned potatoes are often sold under the Desiree name which is actually yellow fleshed. The two look similar on the skin. Desirees are not so good for frying but great for mashing, as are the Ruby Lou variety, which are also very good for chips which Desiree are not. In any case, the Desirees have not been keeping so well of late so we are switching our red skin spuds to Ruby Lou for the time being.
