Pick of the Week - Fresh Peas

Sweet and tender, quick to cook, and incredibly versatile, fresh peas are the ultimate springtime treat.

Peas grow on a climbing plant which produces pods containing seeds or peas. They are sold in the pod and either eaten whole (pod and peas), or removed from the pod before eating.

Peas are among the best vegetable sources of dietary fibre and they have good supplies of protein as well. They are also an excellent source of vitamin C and a good source of niacin (B3), folate and beta carotene. Green peas also provide iron and zinc.

HOW TO PICK
Select peas that are bright green and feel crisp and fresh. Pea pods should snap. Avoid cracked or limp pea pods. Smaller pods are generally the most tender.

HOW TO STORE
Store peas in a plastic storage bag in the crisper section of the refrigerator. Use within 2-3 days.
