Smoked Mackerel Tacos
COOKING INSTRUCTIONS
1. Preheat your oven to 180°C. Using the grater, grate the zucchini and place into a mixing bowl. Select 8 large lettuce leaves and set aside. Finely slice the remaining lettuce adding it to the bowl. If you would like too, add chopped red chilli and half a bunch of coriander to the bowl. Drizzle olive oil and a squeeze of lemon juice and season with salt and pepper and set aside.
2. In a separate bowl, mix the chipotle sauce and the mayo, season a pinch of salt and set aside. Wrap tortillas in foil and place in the oven for approx. 6-8mins. Heat up the Mex sauce in the saucepan, making sure to keep it warm.
3. Shred the smoked mackerel, making sure as you go that you remove any bones. Slice your avo and set aside.
4. Build your tacos with lettuce leaves you set aside earlier, the Mex sauce, zucchini and lettuce salad, smoked mackerel, chipotle mayo and if you wish, garnish with the leftover coriander leaves.
