When I started in business, we got really excited when an old variety called Pontiac became the first red coloured potato we sold and then, some twenty or more years later, Desirees became popular. Nowadays, there are multiple varieties of different coloured potatoes and this trend is accelerating. Quite a few of these new varieties are red in colour. We endeavour to select the most appropriate variety each week or each month for our business. So, we will generally refer to these as red washed potatoes rather attempting to identify the particular variety they are. We will, of course, only sell those varieties that we know are great cooking, excellent flavoured potatoes.
HOW TO PICK
Pick spuds that feel firm and heavy - avoid those with sprouting eyes, or green discolouration. For even cooking, choose potatoes that are similar in size.
HOW TO STORE
Store potatoes in a cool, dry place away from light - the kitchen cupboard is ideal.
