Pick of the Week – Kipfler Potatoes

My pick this week is New Season Kipfler potatoes harvested from the volcanic red soils of the Atherton Tablelands in Tropical North Queensland. Usually sold washed this week they will not be, they actually store better when unwashed. Kipfler potatoes or German Finger potatoes are one of my favourite potatoes. They are thin skinned and can be eaten with skin left on. They are easily peeled by hand under cold water after steaming or boiling. Fantastic for boiling, steaming, roasting or baking, they are great in casseroles, stews or in a potato salad like this Patatas Bravas. This is a potato that will hold its shape and texture even when boiled for longer than normal. For the full taste and nutrition benefits leave the skin on as they are a high source of vitamin C, potassium and niacin (which boosts neurological function). I love microwaving them, then slicing them thinly and then putting them in the frypan with olive oil and French eschallots. This week, we've got them at a red-hot price in our stores which we've never seen before, enjoy them at this bargain price.
