The humidity is getting to its yearly peak which is pretty uncomfortable for everyone. The only way to get through is super tasty meals and great flavours. We have certainly got that in spades this week.
The lambs are getting pretty big this time of year, and carry more fat than your spring lambs. Although it is tough finding the right gear week in week out, I think we have knocked it on the head this week with some sensational boned and netted lamb shoulders that are a really red hot price. These are great slow cooked, or even use this as an incredibly cheap way to buy lamb to dice up for a tagine. With figs and eggplants in season it makes sense to get a Mediterranean themed dinner happening this week!
A few months back, we introduced a new range of free range chicken and I am really excited to be able to get it out there this week for the first time on special. Hazeldene’s has been a family owned and run poultry company for over 50 years, and after 9 months of extensive work it has culminated in Harris Farm being the first to bring this free range offer to market in NSW. The product is sensational, and I think this is the perfect way to get in and try something new. If you would like to know more click http://www.hazeldenes.com.au/happy-chickens/.
For the next special, it has become a staple at my house and I'd say we are very lucky to be able to access it... that is the standing beef rib roasts. Beautiful young beef at its absolute best. This time of year it makes sense to just cut these into the rib eye on the bone, very simply by turning the rib set over to the bone side and running the knife along the bone until you get three brilliant steaks. Now they are big, but a perfect size to share.
Lastly, if you need a nice light lunch option but can’t cope without meat, I'd like to share an old favourite of mine: diced up watermelon and cantaloupe (yes I’m Victorian so you’ll just have to deal with me not calling it a rock melon), crumble a nice light fetta over this and then add prosciutto. I am sure this week's fantastic deal on Serrano will make this a worthwhile exercise.
