Fresh chicken breast fillets are great value this week a healthy, efficient and cheap way to feed the family.
One of my favourites and a highly versatile cut are the grass-fed yearling beef sirloin portions. These are off very suitably bred coastal Victorian Beeds, processed at the right weight showing all the signs of top quality beef, nice light pinky colour with good fat coverage. If it is a hot weekend, cut them into steaks, if it is cooler, then use it is a roast, either way, no more than medium cooking for such a top quality cut, this will give you the best flavour.
Lamb is often a big product over Easter so I think a great option, and the best value in the market at the moment is the bone in legs. These are the Breakout River Legs from Cowra, which they have hand-picked and graded to make sure they meet my expectations. I am very conscious of keeping the lambs at the right size, so I have been very particular about making sure the cap for the carcase is 25kg to keep the legs at the right size for the job, and ensuring the lamb keeps a sweet flavour.
I tried everything in the book to try and get a pork belly promotion for this week, but with an early Easter it hasn’t allowed for a price correction after Chinese New Year, so I decided on pork fillet. It is a great and super easy one for entertaining as well, simply bake in the oven for 25 minutes, cover it and let it rest for 15 minutes, and serve with just about anything, even feeding 20 people, 4 fillets will do a great job and the price will keep you smiling.
In pre-packed deli there is some fantastic value this week on a couple of pre-packed sliced lines, with a double smoked ham, and a corned silverside in the mix, from the award winning Pastoral Smallgoods in Sydney, as well as a bacon, and of course we will have a great imported Prosciutto to treat the family with over Easter.
