It’s Mothers Day this weekend so all those wonderful mums that spent years cooking brilliant meals for us need the return favour from the kids this week, so the focus is on really easy and convenient cuts whilst representing super value.
To kick us off we have the bone in lamb legs, these are from the Cowra region outside of Orange. The central west is a pretty big lamb production base, so these guys certainly know how to produce the absolute best stock, and we are lucky enough to be able to retail this product at the great price of $7.99/kg. Very easy to cook, and feeds the whole family. A perfect centrepiece for Mother’s Day.
The other absolute deal of the week has to be the standing rib roasts. These are nice yearling beasts from Northern NSW and Southern Queensland. For those that don’t know, this is a scotch fillet with the bone still on it. Let me tell you, these are a grand way to say thanks for being a good mum. Roasted whole, then carved at the table, or simply cut into cattleman’s cutlets and done over the wood fire BBQ, they will impress, and they will taste amazing. A nice little side of Brussels sprouts done in the pan, maybe a touch of Pialligo bacon cut into little lardons added at the end for a nice smokey addition to really make it special, mum will be saying she is never cooking again!
For those looking for something simple, but serious value, it needs to be the boned and netted pork shoulder roasts. You can’t really go wrong with something like this, they deliver on so many fronts. I actually prefer the shoulder myself for roasting, it is more flavoursome than the leg, and it makes awesome roast pork sandwiches with the leftovers. Twin pack chickens are fantastic value as well, which I am sure people have a multitude of uses for, but nice sweet little chickens like this are perfect for trying out a recipe such as Hainan Chicken Rice.
