Ricotta and Espresso with Banana and Fig on Toast
Serves 2.
INGREDIENTS
- 4 slices of sourdough, raisin toast or panettone, toasted
- 3 tbsp ricotta cheese
- 1 banana, thinly sliced
- 1 tsp ground espresso or cinnamon
- Honey to drizzle (optional)
METHOD
Spread the ricotta across the toasted bread. Top with sliced banana and sprinkle over the ground espresso or cinnamon. If you want a little extra sweetness, drizzle with honey.
