Peach and Buffalo Mozzarella Salad
Serves 4
Ingredients
- 2 peaches
- 1 tub of buffalo mozzarella
- 15 fresh basil leaves
- 1/2 lemon, juiced
- Extra virgin olive oil
- Salt and pepper
method:
- Cut peaches into bite size wedges. In a large bowl add peach, basil, squeeze of lemon, drizzle of extra virgin olive oil and season with salt and pepper.
- Place into serving dish, tear mozzarella over the top. Drizzle again with extra virgin olive oil and pepper.
